Pepper pork with brown rice and tortillas

I have been doing a lot of recipe posts on here lately, but in between watching Harper, school, marketing duties, and other obligations, I haven’t had much time for any personal writing.  Just three more weeks of school though and I am done until April. For now enjoy another favorite recipe.

 

 

Easy Pepper Pork

  • 1 lb cubed pork
  • 1 tsp oil (I prefer olive oil)
  • 1 tbsp dried onions
  • 1 can diced tomatoes
  • 1 tsp crushed red pepper (packets from pizza restaurants work great)
  • sprinkling of shredded cheddar cheese

Heat oil in frying pan on medium high then add pork and onion. Cook for a couple of minutes until pork is a little brown on both sides.  Add tomatoes and pepper, turning heat down to medium.  Continue cooking for about 15 minutes or until pork is thoroughly done. Sprinkle cheese on top and serve hot.  This recipe makes two to three servings.
